A heated debate takes place in many households when trying to decide on a Christmas main course. Beef is too posh, turkey and ham are too dull and goose has too much fat and not enough yield, so I opted for something to feed a larger gathering that still leaves lots of room in the oven for other dishes – roast rack of pork.
