As they prepare to open the new iteration of the Michelin-starred restaurant in Dublin, Mickael Viljanen and Ross Lewis outline what diners can expect

The sound of drilling is reverberating around Chapter One, but in the Midleton Room, all is calm.

This private dining space, with its complete collection of Midleton Very Rare vintages housed in a custom-built wood and glass cabinet, was supposed to open in 2020. Well over a year later, Ross Lewis and Mickael Viljanen are sitting at its long table reflecting on what has changed in the interim, and what the future holds.
