Hot-smoked salmon, asparagus, pea and leek quiche

Ingredients, serves six to eight

1 leek, thinly sliced

1 tbsp olive oil

500g shortcrust pastry (see below)

90g frozen peas

300 hot-smoked salmon, flaked

1 bunch asparagus, ends trimmed

1 handful dill leaves, roughly chopped

Salt and cracked black pepper

6 large eggs

310ml single cream

For the pastry (makes 1kg)

440g gluten-free plain flour

2.5 tsp xanthan gum

1 tsp salt
