If you want to know me, come and live with me. It’s not a new piece of advice, but for Chris Fullam it was the one that led to him making a move from cooking in some of Dublin’s most highly regarded restaurants to launching a new venue in Wexford.

That new venue is the Sea Rooms, a striking new restaurant set within the grounds of Kelly’s Resort Hotel and Spa in Rosslare.
