Make Darina Allen’s quiche Lorraine for dinner tonight
This classic dish also tastes great cold, so is perfect for a summer picnic
Ingredients, serves 6
For the shortcrust pastry
175g plain white flour
75g butter
1 free range egg yolk
2 tsp cold water
For the filling
1 tbsp olive oil
175g streaky bacon cut into 1cm lardons
100g chopped onions
3 eggs and 2 egg yolks
300ml double cream
1 scant tbsp chopped parsley
1 scant tbsp chopped chives
110g Gruyère cheese, grated
Salt and freshly ground black pepper
Method
