Grilled peach, coconut yoghurt and granola pancakes

Sweet, light and nutritious, these pancakes are perfect at any time of day.

Ingredients, serves 2

125g plain flour

2 tbsp natural sweetener granules

1 tbsp baking powder

½ tsp fine sea salt

1240ml unsweetened almond milk

1 tbsp apple cider vinegar

2 tsp flaxseed

1 tsp vanilla extract

For the topping

1 ripe peach, sliced

5ml maple syrup or alternative
