Clew Bay oysters with sea lettuce, Champagne, ouzo and shallot vinaigrette

Ingredients, serves two

1 dozen Clew Bay oysters

100g sea lettuce – you can buy this online or forage it at the seaside

For the dressing

1 tbsp Champagne vinegar

1 shallot, peeled and finely diced

1 tbsp olive oil

1 tsp ouzo oil

2 tbsp Champagne

Salt and pepper
