Two tasty recipes to try from Saba

This easy yellow curry is jam-packed with healthy veggies and lots of flavour thanks to the Simply Better Thai Yellow Curry Paste.

Yellow Thai Vegetable Curry

Ingredients, serves 2

60g Simply Better Thai Yellow Curry Paste

20g Simply Better Cold Pressed Rapeseed Oil

400ml Simply Better Thai Coconut milk

1 cube Simply Better Thai Palm Sugar

2 kaffir lime leaves

6g Simply Better Clogherhead Oriel Sea Salt

100g butternut squash, diced into 1 inch sized cubes and parboiled

100g sweet potato, diced into 1 inch sized cubes and parboiled

50g potatoes, diced into 1 inch sized cubes and parboiled

30g carrots, diced into 1 inch sized cubes and parboiled

30g onions, diced into 1 inch sized cubes

20g fried shallots

Method

1. Warm a saucepan to medium heat, then add the oil and the yellow curry paste. Stir the paste and oil until a fragrant aroma is released, then add the coconut milk and bring it to the boil.

2. Next, add the kaffir lime leaves and simmer for 1 minute before adding the palm sugar cube. Simmer until dissolved, then season with the sea salt.

3. Add the butternut squash, sweet potatoes, potatoes, carrots and onions and cook for 3 to 4 minutes, then serve garnished with the fried shallots. This is perfect with Simply Better Organic Jasmine Rice.

Phad Khing (Stir Fry Vegetables with Ginger)

Ingredients, serves 2

50g carrots, peeled and sliced

50g broccoli florets

50g baby corn, halved

2 tbsp Simply Better Cold Pressed Rapeseed Oil

2 garlic cloves, peeled, crushed and chopped

15g ginger, thinly sliced

50g button mushrooms

50g mixed peppers, sliced

30g spring onions, cut in 4cm lengths

50g onions, peeled and sliced

50g pak choi, sliced

2 chillies, sliced

100g Simply Better Thai Vegetable Wok Sauce

Method

1. Blanch the carrots for 3 minutes, the broccoli for 2-3 minutes and baby corn for 1 minute and then plunge in cold water. Keep to the side.

2. Bring a wok to a medium to high heat, then add the oil, garlic and ginger. Stir until you get a nice aroma, then add the mushrooms, peppers, spring onions, baby corn, pak choi, onions and chillies.

3. Cook for another 1 to 2 minutes, then add the Simply Better Thai Vegetable Wok Sauce and mix well for 1 to 2 minutes. This is perfect served over Simply Better Organic Jasmine Rice.

TIP: Chicken, beef or prawns can be added to this dish if you like. Ensure the chicken or beef is thinly sliced, then add to the dish after step two, before adding the vegetables.
