‘Crunch time’ as Variety Jones chef steps out of his comfort zone to open second restaurant
Keelan and Aaron Higgs are expanding their Michelin-starred restaurant and opening a more casual one, Mongoose, at the same location
The chef behind Michelin-starred restaurant Variety Jones has said the expansion of the restaurant and opening of a new outlet is not an effort to secure a second star but that “it would be amazing if a second star came along”.
The celebrated Thomas Street restaurant will begin service in a larger location next to its original space on Wednesday and its former dining room will be converted into Mongoose, a more casual restaurant.
