D’Olier Street, Dublin
It’s all high ceilings and natural light in this city centre spot, which opened in late 2022. Co-owned by chef James Moore, his partner Jane Frye (who runs the front of house), and Anthony Smith of Mr Fox on Parnell Street, the restaurant offers a 12-course tasting menu for €96 with wine pairings available from sommelier Scott White, formerly of two-star restaurant Aimsir. Expect to see signatures like seeded pretzel bread and foie gras custard with English muffins on the regularly changing menu. Dolierstreetrestaurant.com
