This has been one of my favourite hot sauces for many years. For me it’s the OG Irish hot sauce, made in Wicklow, which not only gives brilliant flavour but also really great heat. Mixed with cider vinegar, Mic’s hot sauce also makes for the perfect baste when grilling or smoking meat and vegetables on the barbecue.
