Potato waffles with Sally Barnes’ smoked salmon and lemon crème fraîche

Serves 8

Sally Barnes, who owns the Woodcock Smokery in west Cork, works only with wild salmon, resulting in the most delicious smoked salmon you will ever taste. The potato waffles are made with a waffle maker, but you could use a toastie maker, panini press or frying pan if you don’t have one.
