Michelin-starred Variety Jones pleads with Dublin diners to honour their bookings

Restaurant is expanding its floorspace and offering a more casual dining option as consumers tighten their belts

Diners who cancel restaurant bookings at short notice need to be more aware that their actions could be costing venues the money they need to stay in business, according to the head chef of a Michelin-starred restaurant in Dublin.

Keelan Higgs, who owns Variety Jones on Thomas Street, told the Business Post that customers needed to do more to “honour their bookings” as hospitality operators struggle to manage already-tight margins amid rising costs.
