Cardamom and coconut chicken skewers with pineapple salsa

Ingredients, serves 4

1 tsp cardamom seeds, ground with a pestle and mortar

1 tsp turmeric

1 tsp ground chilli powder

12-15 boneless chicken thighs, skinned and cut into 5cm strips

200ml coconut milk

1 garlic clove, peeled and crushed

1 tbsp grated ginger

Half a lime, zest only

For the salsa

Half a pineapple, peeled and finely diced

1 small green chilli, finely diced

Half a lime, juice only
