Irish cocktails to sip this St Patrick’s Day

The stars of The Three Drinkers on Amazon Prime share a selection of their favourite Irish inspired cocktails.

This maple whiskey sour combines sweet and tart flavours perfectly.

When it comes to St Patrick’s Day, people often want to enjoy a pint of the black stuff while celebrating our national holiday. However, we’re more into our cocktails, so on March 17 you’ll find us sipping a tipple made with some of the country’s best spirits.

To help us perfect our cocktail offering this year, we enlisted Aidy Smith and Helena Nicklin, the hosts of The Three Drinkers on Amazon Prime. The programme sees them team up with a third guest host and highlight a variety of drinks and spirits from different regions.

The duo’s latest, The Three Drinkers in Ireland, was released in 2022, with their third series, The Three Drinkers in Cognac, set to launch later this year. While traversing Ireland, the pair were so enamoured with our offerings that they decided to team up with Sliabh Liag distillers to launch their own red wine-finished limited edition Silkie Irish Whiskey.

They have shared some of their favourite cocktail recipes for you to try this week, so read on for your perfect Paddy’s Day tipple.

Poitín raspberry sour

Poitín raspberry sour

Ingredients, serves one

6 raspberries

20ml fresh lemon juice

5ml vanilla syrup

1 egg white

50ml Killowen poitín

Ice

Method

Muddle the raspberries in a cocktail shaker, then add all the other ingredients, excluding the ice. Dry shake everything, then add ice and shake vigorously again. Delicately strain into your glass and enjoy. You can top with extra raspberries to garnish if you like.

Ingredients, serves one

Ice

50ml Jameson Irish whiskey

50ml Cocchi Americano Italian vermouth or other white vermouth

Absinthe

2 dashes Angostura bitters

Method

Chill a coupe glass with a big chunk of ice. Once cooled, rinse the glass with Absinthe and discard with the ice. Add the remaining ingredients into a mixing glass with ice and stir until cool and combined. Strain and serve with a lemon twist if desired.

Ingredients, serves one

20ml fresh lemon juice

50ml Irish whiskey

10ml maple syrup

1 dash chocolate bitters

1 egg white

Ice

Lemon or orange wheel and finely grated nutmeg to garnish, optional

Method

Add all ingredients except ice and garnish into a shaker. Dry shake first and then add ice and shake vigorously. Strain the drink into your cocktail glass then garnish with a lemon or orange wheel and nutmeg if desired before serving.

Ingredients, serves one

Ice

60ml Jameson Irish whiskey

Ginger beer

Lime wheel and mint leaves to garnish

Method

Fill your glass to the top with ice. Pour the double measure of whiskey into it and then fill it to the top with a premium ginger beer - we like Franklin & Sons. Stir very gently up and down to combine without killing all the bubbles, then serve.

The Dublin

The Dublin (the Irish variation of a Manhattan)

Because you’re using a sweet vermouth, there is no need to add any sugar syrup to this cocktail.

Ingredients, serves one

Ice

50ml premium single malt Irish whiskey (sherry cask)

20ml sweet red vermouth

2 dashes Angostura bitters

Method

Add all the ingredients into a mixing glass filled with ice. Stir for 30 seconds to chill and combine before straining into a Nick and Nora glass or glass of your choice. Top Tip: Use a sweet vermouth so there is no need to add any sugar syrup
