Ingredients, makes one
Mint leaves
A handful of blueberries and strawberries
20ml elderflower cordial
10ml simple syrup
10ml lemon juice
Elderflower tonic
Method
1. Chill a wine glass while you make your cocktail.
2. Combine the berries and mint in a cocktail shaker
3. Add the cordial, syrup, lemon juice and ice into the shaker, then shake all the contents together.
4. Pour the contents from the shaker into your chilled wine glass, then top up with elderflower tonic. If you like, garnish with a few more berries, this time on a skewer, and mint leaves.

Ingredients, makes one
35ml Seedlip Grove 42 gin
35ml freshly squeezed lemon juice
80ml seasonal kefir - we used wild Blackberry and apple in this example
25ml simple syrup
Dash of fresh reduced blackberry syrup
Half a slice of fresh orange, to garnish
Method
1. Fill a deep cocktail glass with a stem or tumbler with ice cubes or crushed ice.
2. Add the gin, then the lemon juice and kefir. Garnish with a half slice of orange against the side of the glass and a paper straw.
3. Finally add a dash of reduced blackberry syrup for both flavour and to create a swirl of colour and movement. Serve immediately.

Ingredients, makes one
15ml raspberry syrup
60ml orange juice
40ml cranberry juice
20ml egg whites
Method
1. Add all ingredients together to a shaker and shake.
2. Add ice and shake again.
3. Pour into a glass of your choice - a coupe is recommended - and garnish with raspberries.
