Cellar notes: The heat is on

Introducing heat to grapes is a high wire act, where balance is everything. Just the right amount of heat, and we get good volumes of ripe fruit and fine wine. Too much sun, however, and the grapes shrivel and burn - and we end up with a tiny, expensive crop.
