Lolly Strahan: The accidental caterer

From a single pitch in Dublin’s George’s Street Arcade to eight outlets and counting, Lolly Strahan of Lolly & Cooks has nourished a food brand from its bare bones. She tells Jessie Collins why she still feels like an unwitting entrepreneur

There’s a story written on the side of Lolly & Cooks’ Merrion Street café, which recounts the creation of the ‘Savage Roll’. It goes that, on a drunken night back in 2008, Lolly Strahan (whose real name is Laragh, but has been called Lolly since she can remember) went on a mission to create the perfect sausage roll. It worked. Only problem was, the next morning Strahan couldn’t remember the ingredients. A more sober trial-and- error process followed, and the Savage Roll, now a local legend in its own lunchtime, was born.
