Shoulder of Kerry Hill lamb with salsa verde
Ingredients, serves five
1 whole lamb shoulder
150ml Newgrange rapeseed oil
Salt for seasoning
A few sprigs of rosemary
3 garlic
Two onions, two carrots and two sticks of celery, roughly chopped into chunks
2 litres chicken stock
For the salsa verde
110g flat leaf parsley
55g basil
55g mint
50g capers
20g Dijon mustard
100ml olive oil
Salt and pepper for seasoning
