Strawberry Pavlova with strawberry caramel
Ingredients, serves four
5 egg whites
250g caster sugar
1 tsp cornflour
1 tsp white vinegar
1 tsp vanilla essence
16 organic strawberries, quartered
2 sprigs fennel or sweet cicely, finely picked
100ml soft whipped cream
For the caramel
250ml strawberry purée
175g caster sugar
Juice of ¾ of a lemon
