Ingredients (serves six)

For the filling

225g pumpkin purée

60g dark brown sugar

1 egg yolk

1 egg

30ml maple syrup

1 tsp cinnamon

1 tsp ginger

1 tsp allspice

140ml cream

A pinch of salt

For the tart case

300g butter

185g icing sugar

70g ground almonds

5g salt

5 egg yolks

500g flour
