This week, Philippe Farineau, executive chef at Ashford Castle in Cong, Co Mayo, takes inspiration from the estate’s gardens to present three elegant dishes for experienced home cooks to try for themselves

Fabaceae, more commonly known as legumes, are the family of pulses such as peas, broad beans, mange tout, fine beans and lentils. Here, I’ve used broad beans and pea shoots from the gardens and paired them with some delicious John Dory.
