Fabaceae and wild John Dory with smoked bacon cream
Fabaceae, more commonly known as legumes, are the family of pulses such as peas, broad beans, mange tout, fine beans and lentils. Here, I’ve used broad beans and pea shoots from the gardens and paired them with some delicious John Dory.
