Seared scallops and crab meat with passion fruit and shaved fennel
Ingredients, serves four
12 scallops
Splash of rapeseed oil
1 tbsp butter
Half a lemon
Salt and pepper
For the crab
120g picked crab meat
1 fennel bulb, finely sliced
1 tbsp dill, finely chopped
2 tbsp mayonnaise
2 passion fruits
For the passion fruit gel
240ml passion fruit purée
3g agar-agar
30g sugar
