Irish whiskey is at the centre of a whirlwind. In the past two weeks alone there has been a Bordeaux launch of a new pot still Irish whiskey, the sale of the nascent Slane Castle Whiskey Distillery as part of a €60 million investment in Ireland’s first Green craft distillery, and the launch of a new distillery in Dublin.
