Chef's Table: This week, Gareth Mullins from The Marker hotel in Dublin (themarkerhoteldublin.com) has two recipes from a new healthy eating menu.
These recipes feature on our new Equilibrium menu, which is all about balance and wellbeing. More and more people want to know exactly what they are eating and want lots of healthy choices, but don’t want to compromise on taste. My main aim in creating these recipes was to make sure the dishes were big on flavour – they show that healthy food does not have to mean bland or boring food.
