Anyone familiar with my cooking knows that I tap into foodie memories from childhood to help create dishes for the restaurant. While this usually entails using a local wild ingredient, the lemon meringue tart recipe which appears here features in Wilde’s for no other reason than it was a regular Sunday dessert in the Keane household when I was growing up.
For this version, I add Larry’s goat’s cheese from Galway Goat Farm....
