This will make about 40 medium-sized cookies, but I tend to split the dough into four portions and refrigerate so that it is on hand for the Christmas period. That way, I can quickly pop some cookies in the oven if I’m surprised by a festive visitor.

250g white chocolate (over 30 per cent cocoa butter)
