Nettle soup: feeling brave?

Now is a perfect time to be gathering young nettles for cooking, as they are at their best in terms of flavour. You’ll be able to identify the younger nettles by the hint of purple on the underside – they are great for use in pesto, though it’s important to blanch the leaves. When picking, be sure to wear gloves, or grasp the nettles tight to avoid being stung.
