Rabbit pithivier: crispy and versatile

Versatile, tasty and lean rabbit meat in a crispy shell, this pithivier is one of my favourite dishes, and I love to serve it with creamy mashed potato and savoy cabbage. For dessert, we make the most of our wonderful Irish apples with these fantastic individual puddings that will go down a treat with any family throughout autumn and winter. Light, moist and delicious, they’re easy to make too.
