Lorraine Heskin and Lorraine Byrne, who opened their first Gourmet Food Parlour in Swords in north Co Dublin in 2008, have not just survived the recession – they’ve thrived. The pair, who both come from Mayo, now have seven Gourmet Food Parlours in Dublin and are also opening a new 80-seater restaurant in Dun Laoghaire at the end of this month.
