Bake 2017: Pistachio and lime cake

This cake has been on the menu in Michael’s for the past 12 years, and Michael himself was kind enough to share his recipe with me when I took over the restaurant to allow the locals to continue enjoying it. It’s gluten free and very easy to make, is extremely moist and will last a few days in the fridge.
