Bake 2017: Flourless raspberry, almond and elderflower cake

This is my go-to cake, and reaches its peak of perfection when local organic raspberries begin to appear and elderflower floods the hedgerows of west Sligo. We use this as a base recipe for our most popular flourless cakes – other variations include spiced damson and orange, or lemon and Macroom buffalo ricotta. This happens to be my absolute favourite though.
