When hundreds of people converged on the village of Leenane, between counties Galway and Mayo, for the May Bank Holiday Weekend Walking Festival, it was always going to be about more than just walking. It was about sustainable tourism at its best.

With their vast knowledge of folklore and history of the land, local farmers became expert walking guides. Local historian Breandán Ó Scanaill became an educator and storyteller, geologist Kevin O’Callaghan led field trips...
