This is a special occasion dish if ever there was one. Don’t worry if you mess up the first batch of hollandaise – we all do. You can make it about an hour in advance, then keep it in a tightly-sealed container until you’re ready to serve the fish.

4 whole sole, around 400g each: ask your fishmonger to trim them for you
