Since setting up her aquaculture venture Abalone Connemara in Galway nine years ago, US-born marine biologist Cindy O’Brien has diversified into sea vegetable and food production.

O’Brien produces the shellfish in Rossaveal for shops and restaurants in Dublin and London.

Her customers include The Restaurant at Brown Thomas in Dublin and London-based seafood eatery Estiatorio Milos. She also has a distribution deal with La Rousse.
