Paul Carty is managing director of the Guinness Storehouse. Situated in St James’s Gate in Dublin, the venue opened its doors in 2000 following a €42 million redevelopment of the drink-maker’s former fermentation plant. It employs 200 people and had more than 1.64 million visitors last year.

Tell us about your career to date.

I was born and raised in Dunboyne, Co Meath, and trained as a chef at Rockwell Hotel School....
