In some countries snails are considered a delicacy; in Ireland they still rarely find their way onto our plates. But that hasn’t prevented them from filling Irish pockets.

The international market for escargots is booming, and Irish producers are looking to cash in. Gaelic Escargot, Ireland’s first snail farming business, announced last week that it is bringing ten new snail farmers on board this year as it eyes new markets abroad.
