Carlow chef Paddy Mullins is looking at expansion a year after opening Pimento wine and tapas bar in Carlow town.

Mullins is eyeing a second venue in Kilkenny, having opened Pimento on Carlow’s Kennedy Avenue, on the banks of the river Burren, in November 2015. The 120-seat restaurant employs 22 people, and serves tapas dishes inspired by a range of global cuisines.
