Rack of lamb with creamy mash
Ingredients, serves two
One rack of lamb, well-trimmed; I get mine from Sherlock’s of Tubbercurry
Salt and pepper
4 tbsp chopped parsley
1 tbsp chopped thyme
1 tbsp rosemary
70g breadcrumbs
30g melted butter
2 tbsp Dijon mustard
1 tbsp wholegrain mustard
For the mash
200g peeled white potatoes
5g melted butter
20ml pouring cream
