Over the phone from New York, Ahmed Gallab is explaining the ethos behind Sinkane, his musical endeavour that has swelled from a solo project by Gallab to a fully-fledged band with six members, who will play this year’s Body & Soul festival at Ballinlough Castle in Co Westmeath.
