Dairy farmers in this country could learn a thing or two from the terroir system used to make some of France’s best wines
It is shockingly early in the morning and a large steel tube tanker-pulling lorry halts at a farm in the green heartland of Irish pasture. Milk is drawn from pristine tanks on the farm and when the loading is complete, the lorry driver moves on down the road to the next farm.
