In the earliest times, sparkling wine was considered a cruel and hateful curse, the work of the devil and a punishment to the winemaker. After months of toil in the vineyard and work in the cellar, the maturing wine, now resting in bottles and ready for sale, would suddenly erupt violently and burst out of its bottle.
