Roscoff onion and white cheddar tart
Ingredients, serves four
400g Roscoff onions, sliced finely
40g butter
100ml cream
300g grated Irish white cheddar
Sea salt and cayenne pepper
For the pastry
180g butter
75g ground almond
75g icing sugar
1 whole egg
300g of plain flour
2g of Maldon salt
Method
1. To make the pastry, cream the butter in a mixer using a paddle until smooth.
