Duo of lamb

This dish is full of spring flavour – it really makes the most of great Irish lamb. You can prepare the shoulder and the jus in advance. We serve this dish with baby carrots, tender stem broccoli and a carrot purée.

Ingredients, serves eight

1 whole lamb rack, French trimmed, cap off; your butcher will do this for you
