Shakshouka

Ingredients, serves two

400g tin chopped tomatoes

2 cloves garlic

1 small onion, diced

100g mixed peppers, diced

20g spinach, blanched

40g baby potatoes, cooked and diced

Heaped tsp smoked paprika

Heaped tsp ground cumin

20ml olive oil

4 eggs

Salt and pepper

To garnish

Scallions, fresh coriander and pickled jalapeños, chopped

Tbsp each of tomato salsa and sour cream

Warmed naan bread or toasted crusty sourdough
