260g organic strong white flour

5g sea salt

25g caster sugar

20g butter

20g fresh yeast

1 large egg

10ml milk

90ml water

For the crème pâtissière

1 vanilla pod

250ml full fat milk

2 egg yolks

65g caster sugar

40g plain flour

100ml double cream
