500g strawberries

1 small bunch tarragon

Juice and peel of one orange

Three quarters of a tbsp sugar

For the rice mousse

150g rice pudding

2 egg whites

50g sugar

250ml cream

2 gelatine leaves

30ml cream

Pinch of salt

For the meringue

2 egg whites

50g caster sugar

50g icing sugar

Pinch of salt

1 lemon
