Whole roasted cauliflower with green tahini sauce and pomegranate

This simple roast is a show-stopping centrepiece for dinners and a great vegan main or side.

Ingredients, serves four to six

2 tsp sea salt

1 cauliflower

2 tbsp extra virgin rapeseed oil

1 tsp ground black pepper

1 tbsp pomegranate seeds

A handful of chopped fresh parsley
