Some dishes are very much of a place. Who could dine at Ballymaloe House and not have the carrageen moss pudding which takes pride of place on the generous dessert trolley, or spend a weekend at the Electric Picnic without fortifying themselves with the wonderful BBQ boat from Kinara, who have become part of the fabric of Ireland’s music festivals over their 20 years in business?
