New head chef at House aims for second Michelin star with ‘contemporary, less Nordic’ cuisine

Tony Parkin, the newly-installed head chef at the Michelin-starred House restaurant at the Cliff House hotel in Ardmore, Co Waterford, will serve his debut tasting menu to guests tonight.
Priced at €150 per person with optional beverage pairings from €85, it will include dishes like cured mackerel with caviar, hen of the woods mushrooms roasted with lardo, and a crème fraiche mousse with dulce de leche.
